宁式鳝糊的做法非常简单,只要按照菜谱步骤一步一步您来一定会享受到一道美味菜肴,宁式鳝糊是中国菜系浙菜菜系中很有特色的菜式之一,宁式鳝糊以鳝鱼为主要材料。
宁式鳝糊-烹饪方法
制作工艺1.韭黄洗净切段鳝鱼洗净,备用大葱成花生姜切成丝蒜洗净剁茸备用。
2.烧热锅,放入葱花爆香,倒入鳝鱼翻炒,加汁料用大火翻炒,煮滚后加韭黄翻炒2分钟后,淋上生粉水及香油,起锅盛入深碟中,以铲瓢将鳝糊中间压出一个凹槽,将蒜茸倒入。鳝糊两旁分摆香菜与姜丝。
3.烧热10克油,倒入蒜茸中,再淋入香油。食前将蒜油与鳝糊拌匀,蘸姜丝即可。宁式鳝糊制作提示此菜宜趁热吃,以热蒜油去鳝腥味,冷了味道就差。

黄鳝不单是苏州的美食,更是整个江南地区独有的风味,据说早年南地有整桌的全鳝宴,数十道菜全是拿鳝鱼当家,并且吃起来是完全不同的味道和口感,但要说这其中最有名的,当属响油鳝糊了。鳝糊做好之后盛入盘中,上桌时用热油一浇,就会听到盘中噼啪作响,这便是“响油”的由来了。这道菜好吃就好吃在冬笋脆嫩爽口,鳝段富含弹性,酱油和鳝鱼的味道杂糅在一起,再经过胡椒和蒜泥的辉发,香味非常浓郁,下酒下饭绝对都格外的赞。
北京的淮扬、本帮老字号里都能见到响油鳝糊的身影,不过虽然同是一道菜,因着餐厅的传统不同,做出来的味道自然也不完全一样,可以说各家有各家的高招。就以玉华台、同春园和美味斋三家老字号来说,玉华台曾经参与过1949年开国第一宴,向来秉承着国宴淮扬菜的标准,所以它家的响油鳝糊不偏不倚,味道适中,大众都易接受。而同春园虽然主打的是苏锡帮,但从1930年进京后,受鲁菜的影响颇深,鳝糊当中胡椒放的比较多,偏辣,口味也更厚;最不一样的是美味斋,这是一家由周总理于1958年调入北京的上海老字号,依着上海本帮菜的传统,鳝糊自然是要放糖的,口味偏甜,每每吃它家的响油鳝糊,我都会想起一手酱油瓶子、一手糖罐子的场景,浓油赤酱
